Sodium nitrite food grade. White or slightly yellowish crystalline powder, highly soluble in water, hygroscopic, and stable under dry and well-sealed conditions. Used as a preservative and curing agent in processed meat products such as ham, sausages, bacon, and cold cuts, where it inhibits the growth of Clostridium botulinum, imparts the characteristic pink color, and develops typical flavor. It also functions as an antioxidant, preventing fat rancidity. Applications: cured meats, sausages, hams, bacon, and canned meat products, as well as in the preparation of curing salts and food and beverage preservation. Properties: pH 8.0–9.5 (1% solution), minimum active content 99.0% NaNO₂, maximum impurity content: nitrate (NaNO₃) 0.4 g/100 g, carbonates 200 mg/kg, chlorides 50 mg/kg, sulfates 100 mg/kg, loss on drying 0.20%.
